So I will be going from the U.S to Hong Kong this weekend. As a gift, I wanted to bring a nice bottle of local wine. As far as I can tell, it is a 375ml bottle, about 12% alcohol wine. I do not plan to carry it. just plan to cushion it nicely and check it.

Does any one know how this works? Is there anything I need to consider?

You can put it in your luggage... but you will have to report it in that country's Custom Form along with the retail value. If it is high you may have to pay import tax.

Generally you can take a small amount of beer, wine, and liquor with you duty free. Never brought any to Hong Kong but 1 bottle of wine should not be an issue.

Most countries allow 2 bottle of wine tax free, doesn't matter how expensive or alcohol content. But that varies from country to country so you better check on hongkong's custom/immigration website.

I never check in wine, always hand carry. Have you seen what those luggage handlers do to your luggage?
