any of you make cheese or yogurt?

basically i'm wondering why commercial yogurt is so damn smooth? obviously there's some sort of process involving a puree and or an extensive stirring but i was wondering if there's some sort of additional filtering, straining or recooking process involved with the yogurt.

anyone know?

Depends on the starter culture you use as well as other processing steps.
