Trying to figure out what a "good" time is for 500M rowing intervals. I've been fighting to get below 1:42 split times and can't seem to do so. Any tips?

Make sure your form is up to snuff. Have the drag under 120. The faster your stroke rate the higher you can make the drag factor (to a point).

If your form is good, then it comes down to aerobic fitness (mostly) and strength (a little) get any faster.

So a "good time" depends on your age and weight.

Form is pretty good, so I guess I just need to spend more time and/or get stronger. Which is frustrating, as I've been fighting to get below 1:42 for 6 months now.
