I'm wondering if flash frozen fruits (peaches, strawberries, blueberries, etc.) retain all their nutrients after being frozen and stored, then rethawed and eaten. I assume they do keep a good amount, and I realize that eating fresh fruit/veggies will trump frozen ones anyday. But it's hard to find good fresh fruit in Chicago in the thick of winter.
I'd be interested in finding out, say, what one frozen peach is worth vs. one fresh tree-ripe peach in terms of vitamins and antioxidants. So...any nutritionists or health-food gurus in here?

Boiling veggies will remove some nutrients considering it's a chemical reaction....but I don't think freezing fruits do anything.

The horrible thing about fruits and vegetables is that their nutrition content depends entirely on how rich the soil in which they're grown is.

If it's not in the soil, it can't be in the plant - as far as minerals go. Then you have a cascading effect where deficiency in a mineral or nutrient causes a deficiency in the production of another substance, etc..

Just saying that the nutrition content of fruits and veges is an inexact science. Going to a nutrition website will give you an idea though.
