They look pretty nice. I have a full set of crappy Henckels which really suck. So I went out and got a lovely Global chef's knive that I absolutely love, light as a feather and sharp as can be.

Henckels can be good or bad. It depends on if you buy the quality Zwilling J.A. Henckels brand or the crappy J.A. Henckels International brand.

I have a higher-end set of the Zwilling brand and they're so sharp they're scary.

i have a 7" and 4" of the henckels professional S knives. they're the first expensives i've ever bought and works much better. ended up tossing out all the other knives, except the cleaver.

My parents bought Henkel (sp?) knives a long time ago (10-20 years ago) and they're still going strong.

I have a Wusthof 4" parer and 6" chef and a 7" Shun santoku, which is the most awesome knife I have ever used. I want to replace my Wusthof parer with a Shun paring knife when I get some free cash to spend.

Nice but how much?

Also, I've got a bunch of dull Henckels knives. Anyone know of a good way to sharpen them? The sharpener utility that comes with it doesn't do much and I've bought all these little gadgets that are supposed to help but they wear out pretty quickly. Am I stuck just doing it the old fashioned way with a wetstone?

Yes, that's the best way. With a little practice (and some idea of what you're trying achieve) you'll get great edges if you have the right stones.

Otherwise, you can buy something like the Spyderco Sharpmaker or the Edge Pro Apex, both of which allow you to create consistent sharp edges. I wouldn't recommend anything else if you're looking for a device to help you sharpen.

We bought Victorinox, think they are made by a spin off company of the maker of Swiss Army knives. Been very pleased with them. Made in Switzerland I believe. Most Henckels
are made in China these days.

Global Chef knife. Best knife I've used. Makes chopping and cooking a pleasure.

I have never been too impressed with Henckels (sure as hell not their cheap International line, that stuff is beyond crap). Their Pro S (I think) line is good, but I just don't like how they feel. Ditto with Global, I just don't like that sort of feel that those knives give. I like the Wusthof ones I got, but the Shun just totally blows them away.
I have never held a knife that feels as comfortable as a Shun knife. Everybody's hand is different and some may hate how the Shun is designed (I think it is simple yet innovative as hell) and others may like the Global thing - or even a Kyocera ceramic knife.

I am now a Shun fanboy!
