Any info on socket 2011 Xeons?

Looking for the what and the when on these. I'd like to know if there will be an 8 core version available around the time X79 boards appear.

The 8 core Sandy Bridge EP chips will be out this year. There have been confirmed samples out there (shown by JCornell, a known Intel leaker) with 8 cores @ 3.1GHz with a 150W TDP.

The Sandy Bridge EP will take the place of Westmere EP. So expect about $1,700 for the highest end, dual socket capable chip.
