Any idea what I'm looking at for a new clutch for an '89 323?

It shouldn't be too expensive at a good local mechainc.

Clutch Kit - $200 or less
Flywheel Resurface - $25-35
Transmission Fluid - $12-15 (Complete Drain and Fill Quoted)
Labor - $225 - 315 depending on labor rate (4.5 hrs Flat Rate Time)

If you brought in to my shop it would be qutoed at $430 to replace the clutch assembly. This wouldn't include any other worn or damaged parts other than what is listed above.

I will shop around and see how competitive people are, a shop quoted me 'at least a grand' ($1000 AUD) the other day, which seemed (and indeed now you've confirmed) utterly daft :Q
