Any good Cinco De Mayo recipes?

Mexico's Independence Day is Sept. 16 (1810). Cinco de mayo (May 5) refers to the Mexican victory over the French at the Battle of Puebla (1862).

Why is it not known as their independence day, didn't France get Mexico from Spain.

SO how could they have been independent before that?

Sorry, but stuff like Cinco de Mayo annoys the hell out of me. Just declare a few random "Get drunk on the patio of your favorite restaurant!" days here and there during the year and be done with it already.

By way of apology, you could make some fajitas. They're easy and tasty.

Marinate chicken or flank steak in lime juice, onion, garlic and cilantro overnight (you can add tequila to the marinade if you like).

Grill the meat and slice into thin strips (cut the meat at an angle across the grain).

Sautee onions, garlic, and various peppers in olive oil.

Steam flour tortillas in the microwave to soften them up (place tortillas between a few damp paper towels and put a small shot glass of water in the mic as well to provide some steam). Just don't overcook them or they get rubbery.

Assemble your fajitas at the table with the sauteed veggies, shredded cheese, fresh chopped cilantro, sour cream, salsa and whatever else sounds good.

How's that? 🙂

Yeah I understand the hate towards the stupid holiday's. I too am not very fond of them actually I am getting ready to go shopping and thought that mexican sounded good and realized the date and worded my post accordingly.

The fajita recipe sounds good, I can't wait until summer so I can make salsa with fresh tomatos from the garden MMMMMM
 
Brown some hamburger w/ onions, green chiles, and assorted spices.

Wrap in flour tortillas w/ cheese.

Place several in a casserole dish and cover w/ cheese and enchilada sauce and bake in the oven for maybe 10min or until the cheese is melted and they are heated through.
