Any Exchange 2K Gurus in the house?

Could someone please explain the difference between an SMTP Virual Server and an SMTP Connector in Exchange 2K?
I've taken over the administration of a small office network running EX2K/ISA2K on Win2K Server. They appear to be using an SMTP connector to link up with their ISP and then distribute the mail to the appropriate reciptents and I don't quite see how it works.
Also, what's the difference between using an SMTP Connector to collect the mail and using a POP3 Connector.
