Any cooks/chefs out there? Can you make a desert with tomatoes?

Hi guys,

Need your input, i'm entering a cooking contest at my local church, and this year's theme is tomatoes, we need to prepare a 3 course meals with tomatoes.

Any clue on how to make an enjoyable desert with tomatoes? there's a 1-hr limit for the cooking.

Oooh thanks! now i have to figure out how to get an oven to the competition.. lol

it's being held outdoor, i'm using my portable stove top.

hmm.. do u think one of those mini oven would work on this cake?
