Any apps to convert scanner images into text

I have a document that I would like to convert to text so I can cut and paste parts of it. When I scan the document it always goes to an image.

Anyway usualful utilities to convert an image to text ?

You're looking for an OCR program, Optical Character Recognition. Your scanner probably came with one.
