Makes no sense to me either. But when I enable antialiasing and run NFSIII, the keys seem to stick sometimes, for up to 5 seconds at a time, during which time, the game keeps going, but the keys do nothing.
It's at 800x600 already; that's the max that the game will allow. Only in 16 bit color.
I've already run Giants at 1280x1024 in 32 bit color with 4xFSAA enabled. It was only about 6 fps, but the keyboard keys didn't "stick" or freeze the way they do in NFS. NFSIII with the 4xFSAA enabled is still very liquidy smooth though, disregarding the keyboard weirdness.
What OS, and video card are you running? Is this single player of multiplayer? Do you have a game pad or joystick you can use to see if you have the same problem with that?

Single player mode
Using only the keyboard - joystick isn't plugged in, and the mouse steering is disabled.
Basically, the ONLY setting that is different here is the antialiasing that makes the keyboard controls go funny.
