I'm not sure of what I want to make out of this PSU, except that I am looking to build a Intel quad core system, with the addition of a Nividia card, 8800 series and up.

I do not believe I will be SLI or Crossfire as of right now. But I was just wondering what can I run on this type of PSU. I haven't built a computer in over 3 years now, everything's so fast and power consuming.

I need some assistance on rails.

Really you should decide what you want in a system then determin if the PSU can be used or if you'll need a new one. But the EA 500 is a good solid PSU and should support any single, w/ single GPU, availible.

So put togetehr a parts list of what your looking to get and then we can tell you if your good to go or not.

If you have any extra needs, like huge numbers of hard drives, or heavy overclocking, we'd need to know... otherwise, 500W is plenty for any single-CPU, single-GPU system today. Antec's 430w can also manage anything but the latest GT200 monsters.
