can't you only get mad cow if you eat cow brains, or any part of the cow's nervous system?

Here's the scary part: symptoms (at least in humans) don't show up for ~10 years after consuming contaminated meat.
What if the same holds true in cows? I wonder how long a cow can have this sickness and not show symptoms, and if that means the animal can get into our food chain before there's any reason to do testing on it.

i actually read an article before that said over 10,000 cases of mad cow disease were misdiagnosed as alzheimer's.
