After watching quite a few animes, seems that most of the stuff left out there isn't very good. Any suggestions?

Here's what I've seen already:
Gundam Wing, Gundam Seed, Read or Die TV, Noir, NG: Evangelion, Naruto, Full Metal Alchemist, Full Metal Panic, Full Metal Panic Fuffomo, GITS - SAC, Get Backers, Berserk, DN Angel, Last Exile, Scrapped Princess, Kimi Ga Nozomu Eien, Cowboy Bebop, Lain, Chobits, and Love Hina.

Edit: here's more that I remember watching after hearing a few suggestions
Big O, Outlaw Star, Trigun, DB:GT, DBZ, DB Movies, Grave of the Fireflies, Cowboy Bebop: The Movie, Escaflowne: The Movie(but not the series which I heard was much better)
 
Initial D, Rurouni Kenshin, dot hack, Ah My Goddess, Inuyasha, Outlaw Star, Trigun just to name a few 😉
That should keep you busy for quite some time.
Edit: almost forgot to toss The Big O in there.

Did you just quote me or what? You listed the same anime I did in the exact same order... I doubt that's a coincidence.
I'll second all your movie recommendations too. I didn't even think of movies since all the OP listed were series so I figured he wanted something a little longer than just a 2 hour movie could provide 😉

Tenchi Muyo, definetly. A very, very funny series. Washuu is one of the cooler mad scientists I have ever seen. Sure, it takes half the first series for the plot to kick in, but that's nothing new. And when it does, that just makes things all the better.
 
Akira and Tank Police are sweet anime movies

as for shows, I personnaly like Yu Yu Hakusho, Cowboy Bebop, and Gundam Wing.

Very popular is DBZ, but I think it's quite lame...
