I just want to be able to create simple spreadsheets. Essentially just a few columns of sortable text. Perhaps being able to set the fill color as well.

My phone came with Polaris Office 5, but it doesn't seem user friendly. Or I just don't know to use it well.

My current favorite is a stand alone called Office 2012: PlanMaker - think it is $5.00 but they offer a free trial also.

They also have a word processor called TextMaker

Google Drive allows you to create, edit, color fill, and sort simple spreadsheets on any android device. Also, it's super easy to edit the file on any other computer/device that is logged into the same Google account.

I recommend PlanMaker Mobile, too.
I tried out a lot of spreadsheets, this not only has the most built-in functions of all (> 330), but also the most features, many of those unique (e.g. no other spreadsheet app masters syntax highlighting, and rotating text, supports 3D charts, shows formula instead of results, converts from one format in another, has direct export to pdf, etc.), and it has by far the best compatibility with Excel (all xls, and xlsx formatting looks faithfully). I use Documents to Go which is the only Excel-compatible app I've found that opens my football pool spreadsheets loaded with macros properly. Will have to look into PlanMaker Mobile too.
