I've ordered pizza with anchovies before and loved it.

Last week, I made homemade pizzas and got a can of anchovies figuring it was the same. I put them on the pizza, and realized when eating it they were much saltier than I anticpated. Should I have rinsed really well or something - or am I using the wrong stuff?

If they tasted really salty you were using the right stuff, it was the pizza place that was off. Perhaps they were rinsing theirs in advance or using a supplier that originally cured them with less salt. You can rinse them well before serving to reduce the saltiness somewhat. You can also try a different brand.

They're supposed to be salty. I suspect the pizza joint rinsed theirs or used a low-salt variety. Perhaps their customers liked that better.

I've gotten anchovy pizza from Pizza Hut and it was way too salty for my tastes. It's how it's supposed to be though. I'm guessing for you the canned ones are saltier.

you can reduce the saltiness of the anchovies by soaking them in milk for about 20 minutes rinse then pat dry, and yes canned are way more salty than the kind in jars of olive oil

I can damn near eat pure salt... but anchovies are a bit much even for me. I rinse them off first.
