They heat it to well above boiling temperature and, IMHO, it tastes awful.

We can get it in the UK but it's not very popular, it is much more popular in the hotter parts of Europe though.

I agree. The taste thing varies, some people like it, some don't.

I also agree it is hugely heated up, BUT my understanding is that it is done quickly to avoid changing the taste too much.

I have to admit, I can hardly tell the difference between UHT and fresh milk, myself. But I agree the fresh milk does taste a bit better, especially if it is non-skimmed milk.

Some people also believe that the useful enzymes and stuff are missing/ruined/harmed by the heat, and so they recommend the fresh stuff, especially for children.

I have been drinking UHT milk from Europe and Latin America for 14 years now. Due to the hot humid climate here it holds up well compared to the regular milk which is scarce and hard to find on a regular basis.

I can easily tell the difference between UHT and fresh milk and I prefer fresh milk hands down when it comes to taste.

Many of the refrigerated milks sold in US grocery stores are actually UHT milks. I would bet that many, if not most, of you are already drinking UHT milks with out even realizing it.

If you buy your milk from any of these brands you are getting UHT milk:
Borden
Horizon Organic
Organic Valley
Most Grocery story brands

In the UK, we (as a nation) use to have regular (daily) milk deliveries, over most of the UK, probably from the 1900s, onwards. But as the supermarkets gained popularity in the 1960s (a sort of American import), people began buying their milk from the supermarkets, and over the decades, the daily milk (float) deliveries has mostly stopped or significantly reduced these days.
Instead we can buy the fresh milk or UHT stuff, from the supermarkets.

I specifically avoid the "ultra pasteurized" milk. It tastes terrible and after some reading about it ages ago I'm in the camp that believes it kills good stuff in the milk. Not far off from colored water. But, I do believe going forward that it will be harder and harder to find non-UHT milk. It's already very difficult to do for half and half.

I've been getting my milk delivered from a dairy for the past couple of years. The milk taste is certainly stronger and some people find that objectionable, but I love it.

I guess benefits of less waste in terms of preventing milk spoilage and doesn't require constant refrigeration leading to energy savings.

Let's all stop eating food and switch to energy bars and shakes. Let's stop using heating and air conditioning and live in thermally controlled sleeping bags too!

There's some fast food chain in the US that sells some milk that's processed differently. I know some people rave about it but I don't know, seems to be the opposite of whatever crap the OP is pushing. It's normal milk but it's slow processed or, something about they process it vertically or something that let's them pasteurize it differently and it helps it retain more of the flavor and nutrients. Even the skim version is supposed to be pretty good and comparable in flavor to like 2% normal grocery store milk. I've never tasted it myself so I can't speak to their claims.

Er, OP if you're that concerned with shelf life why aren't you buying powdered or condensed milk or crap like that?

I used to live in the South where Braum's was popular. It's an ice cream parlor and restaurant, but it's also a little grocery store where you can buy their milk and ice cream. Apparently their milk is better because they use some kind of vacuum process to concentrate it by evaporation.
