Which series offers the best performance so far? Will only be using 1 vid card for this rig.

Same performance, different features. FX has no Integrated GPU the GX does have an Integrated GPU. That's it in short. What you want is a board that has the SB750 and decent Bios support. The big four (Foxconn, MSI, Asus, Giga) and other smaller manufacturers (DFI, Biostar) are all commonly used here. For a cheaper option the Biostar 790GX DDR2 boards are a good buy, for the FX boards I'd recommend my DFI board (last time I checked the Asus and Foxconn were overpriced for no reason) and for DDR3 I'd say the Giga 790x for around $100 and for High end the MSI GD70 is arguably the best atm. Some of the FX boards have a beefier power regulation system so might prove slightly better in overclocking but on average the GX is definitely a solid board even for overclockers.

Go with the Biostar- the SB750 should net you around +200mhz OC when you have it setup correctly.

790FX is faster than 790GX... but then also more expensive.

It's not faster, the 'northbridge' itself is the same it's just the boards themselves are different. more expansion slots PCI-E 2.0 16x16, power circuitry, no IGP etc.
