Had low disk space on our engineering server (2k3). So I decided to cut a folder off of the full drive and paste it to the system vol. When I did this I got an error right away "Cant read from Source" (i think) and only the folder was pasted none of the info. I tried using the undo but it looks like all of the information in that folder has been lost. I'm new to 2003, is there any other place I should look?
 
"Can't read from source" is usually indicative of a dying drive if the source is on a local drive. Look in the eventlog, you'll probably see drive errors there.

backups arent done on that particular folder

Good thing it happened to a folder that you don't really need then.

ah... depends how much that information on there was worth to you.
There is actually possibility to restore lost data, I'm not all that familiar with the details, and it depends what exactly happened to your system, but most of the times it is possible to recover lost data, though it can cost a lot of money, and I'm talking 5 figures here.
