Depends on your goal, if you want to slow heat it then shinnier side should point out. But if you want to fast cook it shinnier side should point in. The fact of the matter is, through convection the potato is going to be heated fairly fast regardless of how shinny the foil is. But this will affect it by about 1 degree.

reynolds wrapWhich side of the foil should I use (shiny or dull)..... ? It makes no difference whether the dull or shiny is on the outside for cooking or freezing. The difference in appearance between dull and shiny is due to the foil manufacturing process.
