I believe this needs to be resolved once and for all.

When using foil in the oven does the reflective side go on the outside of the dish or the dull side?
 
theres a shiny side and a dull side? i usually put the side that comes out on top, on top of whatever im placing it on
 
Had this conversation when cooking for a date at my place.. lol
She started folding it shiny shide out.. and i said 'Doesn't that reflect all the heat away' She replies. oh yeah.. and was mega impressed with my cooking knowledge... lol

Dunno which way is right, but it won me major points that nite.. lol

Depends on your goal, if you want to slow heat it then shinnier side should point out. But if you want to fast cook it shinnier side should point in. The fact of the matter is, through convection the potato is going to be heated fairly fast regardless of how shinny the foil is. But this will affect it by about 1 degree.

shiny reflects heat. is used to protect wing tips and other faster cooking parts of poultry when cooked in oven.

Which side of the foil should I use (shiny or dull)..... ? It makes no difference whether the dull or shiny is on the outside for cooking or freezing. The difference in appearance between dull and shiny is due to the foil manufacturing process.

The dull side comes from when it is rolled out. The foil is so thin that they have to roll it in two layers so it does not tear. The two sides that touch during this process are the dull sides. I saw it on the Food Network a while ago.
