really, they look nothing like the diagrams or other cables I have used. would you have a diag I could see? Please note I am a novice at this type of wiring, should probably have said that lol
The "white" wires don't have the normal colored stripe on them like most CAT5/5e, but it's still the same color scheme as every other standard ethernet cable. Just use the white/light colored wire that is wrapped around the solid wire as if it was the striped wire of the same color (i.e. white wire around the brown is white/brown).
they actually look like a brown pair and a slate pair... but who cares. just use the brown as orange and the slate as brown. colors dont really matter, it just keeps things easy when you have to re-terminate an end.

It is bad color in the photo. Those colors are the typical blue green orange brown in cat6 / cat6a. The "slate" is actually a pale blue, the brown is well brown but often looks tan in the light. I have many boxes of cable using that "light color." It plays hell on the colorblind though.
