Although He has gone off the deep end now and his movies go straiight to DVD or USA Network,
Steven Segal's first couple of movies had excellent fights and if you have ever seen any real Aikido demonstrations, he is pretty authentic although he does blend a few other forms in.
 
Pick any scene from Crouching Tiger, Hidden Dragon or any scene from any Jackie Chan movie. Favorites that come to mind are the Li Mu Bai / Jade Fox / Governer's Daughter / Police guy / Police guy's daughter fight in CTHD and the fight with Jackie Chan's real life bodyguard at the end of "The Legend of Drunken Master".
 
Iron Monkey had some good fight scenes.

I really liked the scene in The Last Samurai when the ninjas attacked. I think it was the best orchestrated sword fight I have ever seen.
 
Neo versus the Henchmen in Reloaded...thats the only part of that movie I really loved.
Jet Li versus Big Black Pimp in Kiss of the Dragon
Jet Li Versus the German Twins in the same movie. (Pile Driver!)
Jet Li versus The White Ninja dude at the end of Unleashed
Norris versus Lee
Lee verus Kareem

I didnt know we were counting gunfights too! That movie had THE best gunfights I have ever seen!!

I think that movie also takes the award for highest body count ever. Love that movie!
