All the G200/R700 stuff is all rumor/speculation, right?

Nvidia doesn't comment on unreleased hardware. We get 'insider leaks' about a month before the expected release date but no official statement/press release comes out until the product is ready to launch (that is ready for purchase). AMD is somewhat similar, I believe.

The best we can get is a casual remark dropped in an interview that they have something lined up for 'a quarter from now'.

No, we know nothing for a certainty about r700/GT200 - except for the leaks and "sources" that were reliable in the past.

Kinda makes you wonder .. what does the "T" in "GT200" stand for .. if you really search the Wikis and you look to their "patterns" in naming conventions you will probably know also

The whole 'GT200' naming convention really doesn't make much sense at all. How does one go G7x, G8x, G9x to GT200 and yet still call the card a "9900"? That's actually one of the reasons I think the rumors might actually be true... No one but NVIDIA could come up with something like that a keep a straight face.
