I just purchased a PS3 a couple weeks ago and wanted to post my thoughts of the three systems. I also own a Wii and a Premium Non-HDMI 360 (second console, first one died).

PS3
It's a very quiet system, and feels very well built. The interface is somewhat difficult to read at 1080i on my 26 inch Samsung HDTV. The built in web browser is nice, and the online features are very easy to setup.
The only game I currently own for it is Warhawk. Warhawk is incredible , it's just a total blast. It's important to point out it's online only, but given that the playstation network is free I highly recommend picking it up. I bought the online version since it was cheaper and I didn't need another headset.
I've also downloaded a bunch of demos. One annoying thing about demos is that after downloading them, you need to install them. You can't just "play" like you can on the 360. They also blast music and stuff when you select them, which I find kind of annoying.
It definitely feels like it will be a great system for the future, but right now I just can't find that many games that I am interested in. The blu-ray video playback is very nice, but once again I'm running it at 1080i.
One thing I don't like is how you choose the resolution. I prefer to play my games at 720p, but unless I tell it my TV does not support 1080i, I can't pick a resolution.

Xbox 360
It's loud, and it's especially noticable when compared to the PS3. The PS3 has taken over fulltime movie playback for me due to the difference in noise levels.
I also find that I prefer the 360 contoller, but that really comes down to a matter of preference. It feels more "solid" in my hands, the PS3 one feels kind of flimsy. This is probably due to the lack of a rumble feature in it. The other thing is that it doesn't seem possible to use the controller to turn the PS3 on, only to turn it off. I'm lazy
*EDIT* Thanks for pointing out my error, it is indeed possible to turn on the PS3 with the controller **
The 360 also had a much more solid library of games in my opinion, and more interesting titles on the horizon. The online functionality of the 360 is superior to the PS3. It does cost money, but in my opinion the difference is worth it. The Xbox Live marketplace browser is much easier to navigate then the Playstation Network, and joining/hosting multiplayer games, finding friends, and downloading content all seem easier in the 360.
Overall I find myself preferring the 360 for gaming, but I imagine once PS3 development revs up things will balance out more.
The 360's reliability problems have also affected me, both my console and my brothers have died. His cost $140 to repair, mine was replaced for free (well, I bought an extended warranty).

Nintendo Wii
I love my Wii, but I rarely play it. It's a fantastic party system, and great for when you have friends. I haven't picked up Metroid yet, but looking at upcoming titles it looks like the Wii will have more single player content that is enjoyable.
The Wii internet browser is awesome, though I don't think it has Keyboard support and the PS3 does. Hopefully they will fix that. The Wii interface is also one of the easier to use in my opinion, and probably the best of the three.
The online features for gaming however, suck. It's just a pain in the ass, and I really hope Nintendo revamps it. The virtual console is cool, but I'm still waiting for Earthbound. It's also fairly quiet, though it can rev up a bit and make some noise.

Overall, I love all three systems, but if I had to recommend one above the others I'd have to say go with the 360. It has the widest selection of games in my opinion, and the online stuff is great. If you are a more casual gamer, or want to get your girlfriend into gaming, get a Wii. It's a blast.
