Well I'm not a "switcher" (god, I hate that fucking term almost as much as "fanboy"), but xmeeting is one of the most impressive bits of freeware I've come across for my macbook. h.323 standard videoconferencing software, uses builtin iSight, with builtin STUN support (and some free servers), location profiles, and can control remote cameras on Polycom videoconf systems, I'm going to test it with some Tandberg systems tomorrow as well.

Textmate, Adium, MacTheRipper, NeoOffice, and OmniOutliner are all amazing and I use most of them every day. Preview, Safari, and iTunes come with the OS of course, but are also excellent.

I'm in grad school for math, so I've recently found TeXShop and FreeMAT to be very useful. They are both free/open source. The former is for typesetting mathematical expressions (used for typing articles) and the latter a free alternative to MATLAB. Both are available on SourceForge.
