Keep an eye on your minimap They only can nydus if your not being attentive and yea, keep spread out units all over your base burrowed.

do you have to have an overload to plant the exit? or can u just use a mutalisk to fly by and that will work also?

I think you need to be able to see the base (no fog of war), so you could do a fly by, but then you have to be fast to place the exit, but if they have units there, they could destroy your canal exit. ( I think this is how it goes, but I haven't played Starcraft in a while. Correct me if I'm wrong.)
