It does rot. The trick is they age beef in HUGE chunks -- and then jut cut off the rot. One steak isn't big enough to do this because after cutting off the rot you have nothing left, but doing it with huge slabs means you can save 1/2 of the meat.

They age it in a temperature controlled room. It does rot. It rots from the outside in, so after it ages the outer layer of rot is cut off and what's left is the good steak meat. It sound horrid but it does bring out the flavor.

Edit: Oh hell, beat me to it.....

Thanks, now I'll think of that process every time I have "aged" meat. Any other foods you'd like to ruin for me? :p

So what category does beef jerkey come in? the shaved rotten stuff? or is it actually vaccum dried or whatever?

Same is true for game - that needs to be hung for a long time; the way to tell if a pheasant or hare has been hung for long enough is that the skin and fur/feathers should slide off when you grab hold of it. If you need a knife to skin it, then it's not ready.
