Advice - Cooking meatloaf but my oven sucks - Can't maintain temperature

The meatloaf's instructions say to cook for 70 minutes @ 375 F

However, my oven is a piece of shit and can only maintain 300-325... how long extra should I cook it for?

um....at least an extra 15, id say, 20 would probably be better. id hate to suggest longer and have you seriously overcook it.

have a meat thermometer? you want about 160 for beef IIRC (google it, im too lazy tonight :p )

Get one.

As long as the juices are light pink you'll be fine. Can't predict how much longer because it depends on how big the meatloaf is and the pan you're cooking it in. Just cut into the middle 20 minutes longer an see where you're at. Also, stop opening the oven door.

Dude! Unless it was disclosed that you were responsible for appliances or something, he has to replace it by law, or you can withhold rent and do it yourself.

Also, if its 155F, cook it for another 10 or 15 minutes at least. It will take longer than you think for the core temperature to rise, especially if you keep opening the oven door.

Put in a bunch of unglazed quarry tiles before you preheat. Cast iron will work as well, but it isn't as space efficient.

EDIT: Didn't see that it only hit 325. Your oven is a piece of shit.

You really need to get that fixed. A good landlord will resolve it in a day or 2. If he is lucky, he just needs a new element, even though a new cheap oven is probably just as cheap and a bigger tax write off :)
