Adobe Acrobat - help!

I'm tryng to use Acrobat 5, having never used the editor before. The built in help isn't helping me much.

One problem, I'm trying to edit a PDF someone else made, using the Touch Up Text Tool, and when i edit text, the text I replace is bold, but the other text already in the PDF is not. I've tried looking in the Text Attributes, but there is no Bold selection. And though after typing the new text, the font listed is different from the rest, I changed it to match. The text is within drawn lines like a table (and it may be).

Another thing is it's a little squirrelly and very easy to move things around screwing it up, that I can't move back, since the Undo is is greyed out a lot of the times (why?).

How do you delete a row?

Also, how to you start a blank new PDF? There is no 'New' selection.

I installed the other options with it like the Distiller. Is it needed? Also installed the 'Accessories'.
