Adding JBOD to a system with RAID 0

I am currently running my system with 4 SATA drives, 2 running in RAID 0 (bootable) and 2 other drives of 2 different sizes. I want to create a JBOD setup with the second 2 drives in addition to the RAID 0 array. I have an MIS K8N Neo Platinum motherboard (nvidia nForce 3 250Gb chipset. I tried to go into the RAID setup menus at boot (after the Bios option) and the selection to create a new array was grayed out. Can I only run one disk array of any type on this motherboard or am I missing a set somewhere. I looked through the manual and found nothing in regards to running multiple arrays (either saying you can or can not)

is there a particular reason why you want to run the second raid in JBOD? do you realize you double your chance of a hard drive failure?
