Abit IS7G issues

Custom system with Abit IS7G mb, 4 1.5SATA, dual 35G Raptors, 4G Corsair 1066 RAM, old single monitor GPU, WinXP Home Edition. Want to upgrade to Win7, replace Raptors with WD Green 1T SATA 3Gb/s , add Iomega 34280 ext 1T eSATA for backup. Need RAID, 2 drives? If not, use one Raptor for OS, buy one WD Green 1T? Cost counts. Applications: web surf, video streaming, stock trading and lots of charts, email, legacy XP programs.

Which version of Win7? Do I need 64bit? Can IS7G handle all this? Need eSATA PCI card? Which GPU and video card? Must fit inside Lian Li A05N case. 3 monitor support would be great. Quiet, reliable, efficient power (only 450W ps).
