Broke down and bought a bunch of parts to build a new Doom 3 game machine.

And now I am getting some wild reading from the IS7 with the default BIOS.
Even with the cpu UNDERCLOCKED to 1.60ghz the bios is showing 70C
It can't be correct.
I can put my hand right on the back side of the motherboard and it isn't even warm.

My case came with multiple temp sensors, which are really thin.
I'm going to put one close to the top of the cpu to varify the temperature.

Should I bother updating the BIOS ?

You can try. My msi board is the same way. Temps for the cpu go all the way to 84c, but the system is stable, so I don't worry. I know the heatsink is properly installed, and the voltage is only 1.52.

The newest BIOS recalibrates the temperature so the CPU reads about 10ºC cooler. The other two temperatures in the monitoring software that comes with it stays the same (I think "system" and "PWM").

If the temperature bothers you, update the BIOS. I know that with an older BIOS my overclocked Prescott would make it to almost 90ºC before I had stability problems (either lock or spontaneous reboot).
