thinking about getting the nexus 7 to have around the house. It would be left out for myself and others to use, so im concerned with my own private information on it. Yes the obvious answer is to use a different google account, but i have all the apps i purchased tied to my account.

My only idea is just to install what i need to, then use tib to remove market, gmail, calendar, contacts, etc. I feel like this is less than ideal though.

any solutions?

Not out of the box. You might be able to find an app which fakes it. Maybe in Key Lime Pie. iOS doesn't have it at this point either.

I think this is something that really needs to be implemented. Guest mode is probably needed on tablets more than pc's.

Is freezing or removing sensitive apps a good idea? It's really the only thing i can think of.

Well, for the latter you can use any of a number of app locking programs.
