I see 512 sticks are more prevalent now. Will it make any diffrents running one 512 to two 256 on a A7V266 E ?

As far as I know, it doesn't really matter since it's not an nForce chipset.

However, as far as expandabiltiy/upgradability the 512 is a much better choice once the prices of RAM fall again (when DDR333 comes out?).

Actually, I faintly remember benchmarks where 2 sticks were better than one. This was most likely due to interleaving. However, the difference was very small (certainly not noticeable). I would think 2x256MB would be cheaper than 1x512MB, but upgrading might be tougher.

Not right. From 64Mbit sdram chip, it can do 4-way interleaving already, so a single 128MByte sdram DIMM using 64Mbit chips can do 4-way interleaving. Two of them won't make the memory system faster. Interleaving is done inside the individual chip.
