They look like engine management to me. Thats a 100% guess though. It would make sense to put them there below the throttle quadrant and FMS.

My guess is they have something to do with flying the plane, much like the other 5000 buttons in there.

Dang.. helluva view from up there! I don't know what those items do... but my guess is that the humps you circled in black either house a light or an air vent; and the control console circled in red appears to be perhaps the Flight Management Computers, and the four switches in the top center, labelled 1-4, could possibly be the start switches for the four engines. But I'm only familiar with old-school steam-powered B727 cockpits so this stuff is all new to me.

edit: I think the red square encloses the avionics package, not the FMC's. The FMC's are the panel ahead, with the full keypads.

In the red area, the center controls are possibly engine management, like somebody else mentioned. The edge controls on the left/right look like either radio/communications or possibly navigation controls.

The two units on the outer edge are the comm/nav radio control units. The four identical switches are fuel cutoff switches. The bunch of buttons below that control the video displays (which page to display be it FUEL, DOORS, GEAR, etc). Those hump things are for resting your palms on, and you cant see it, but there is a trackball/touchpad type thing on the front of that to control a pointer on those screens.

(dont nitpick me, theres more, but i'd have to explain every button...that is the gist of it, basically)
