A Perfect cup of Milk Tea...

Any of you from HK would know:

A cup of Tea with milk added - sort of like coffee except making one of these is harder than just adding milk to boiled coffee.

Anyone know how to make a perfect cup of "Milk Tea"?
 
1) Go down the street to your local milk tea place.
2) Buy a cup of your favorite milk tea.
3) Drink it.
4) ...
5) Profit!

I would think that the fat content of milk you chose would make a difference. Fat free, skim, 2% or full.

2% to me would not create to much of a milk taste, and let a lot of the tea flavor go through, and keep it rather "thin" in tecture compared to what full milk would do.

Every tea place/coffee place I've been to makes milk tea differently. I like mine with more of a strong tea taste.
 
Yes, some places is way too sweet...that is terrible

the boba must be just right as well. that is if you get it with boba...

Seriously, this isn't the kind with the "boba"

All this is is Tea + Milk. That's it. It isn't the Americanized sh!t that they sell at these Asian places, those from HK should know what I am talking about.

The problem I have is getting the right mix - I am guessing it is the problem with these generic tea bags @ work....
 
A lot of the bubble tea places around here simply make milk tea from a powder mix. When I was experimenting with making it for myself, I tried something with milk, black tea and a simple sugar syrup. It didn't taste bad.
 
OK - English Tea (Hard Way)
1. Boil water (soft water - hard water isn't so good)
2. Pour a little boiled water into teapot
3. Swirl hot water around pot to warm it - empty pot
4. Add 1 teaspoon of tealeaves for each cup to be served, + 1 for the pot
5. Add boiled water
6. Leave to infuse for about 5 minutes
7. Pour a little milk into your teacup (pouring tea before milk scalds the milk and impares the flavour)
8. Pour tea through strainer into teacup already containing milk
9. Drink

English Tea (Easy Way)
1. Boil water
2. Put milk into teacup
3. Put teabag into teacup
4. Pour boiled water into teacup
5. Stir until the colour looks right
6. Throw teabag at room mate
7. Drink and duck room mates left hook
 
Look for QCup, Lollicup, or a Quickly near you.


They all usually have decent ingredients, but the kids working at the boba joints typically don't care and throw them together rather sloppily.

Damn you! I had this thread on my screen as I got up to get something to drink, and all I saw was the "4) ...", and I thought to myself, "Hey, when I come back I'll quote his post and put 5) Profit!". But you had to go and ruin it. Bastage!

to make the real HK milk tea, you need to use the sweetened condensed milk, usually from asian markets, not plain old milk you buy from safeway or albertsons. and make sure you use chinese black tea, also from asian market, not the lipton stuff. adding regular milk to lipton tea tastes like crap.

AH! That sweetened condense milk stuff! Drank that sh!t when I was a kid, but as I grew, heard reports that there was a lot of preservatives and such in it.
 
First, start with the proper tea...contact FoodTV and ask for Alton Brown's "Good Eats" show on tea. good sh*t.

From there, it's kidsplay.
