So I was making brownies tonight (it's my cheat day) and discovered that I had no eggs. D'oh! A quick search online said that I could substitute applesauce. Which of course I didn't have. Some further searching said that any pureed sweet fruit would work, such as a banana, with some extra oil and water. So...I threw a banana in with the mixer and...it didn't come out too bad! :D The aftertaste has a slight banana-y taste, but it turned out pretty good! So FYI if you're in a pinch, bananas work in place of eggs in brownies ;)

My step mom used to substitute plain yogurt for eggs. :barf

I'm a purist. If I don't have any eggs, I don't get brownies.

Why would you need finer points? I can't imagine any possible way to mix those two things and have it come out bad.

Experiment #2:
-1 banana (in place of 2 eggs)
-1/2 cup applesauce (in place of 1/2 cup oil)

Result: Edible; smelled mildly funky. Came out cake-like and somewhat dry. I forgot to put chocolate chips in them, so they weren't as good as last time that I only put a banana in the mix but added chocolate chips. They help balance out the fruitiness and make it more gooey. Experiment #3 will be a hybrid: chocolate chips, 1 banana, 1/4 cup applesauce, and 1/4 cup oil.

I need to pick up that 'deciptively delicious' book by Seinfeld's wife again...I got it for my Kindle, but then I sold my Kindle and I have no way to read it now :(
