Changing the headgasket involves quite a bit of work if you are just used to changing the oil.
You have to remove all the drive belts as if you were changing the timing belt, and take off the timing belt (might be a good idea to change the timing belt, water pump, and acc/drive belts, and do a vavle adjustment). You have to take out the spark plugs. You also have to remove all vacumm lines to the head, dissconnect all wire harnesses and remove the intake manifold too. You also have to remove the exhaust manifold as well. Then, you have to unbolt the head, remove it, then take out the old gasket, put the new one in, and torque everything down, and make sure the timing and everything is right because you had to take out the timing belt. Keep in mind that you will also need a new head cover gasket set (cover gasket, and four spark plug gaskets), and you may need new intake and exhaust manifold gaskets if they get bent or whatnot. It is very very important to make sure the head is properly torqued down. Oh, and sometimes the crank pulley bolt is really hard to get out (It's torqued on at about 150ft/lbs). You will also want to mark all harnesses and such, so its easier to put it all back together. A Helms manual would help imensely, and is necesarry in this type of repair.
A lot of work if you ask me.
EDIT: If other parts are damaged, like a warped head (which you would take to a machine shop to check for the eveness of the head plane) or scored cylinder walls, or fried pistons/rings etc, then you are in for a lot more than you think.
