Ok, so I have a couple of questions.

1. What would be faster 8800GS SLI (Any of the three models) or a single 8800GT?

2. Whats the difference in performance between these three 8800GS models and is it worth it to pay for the overclock or should I just do it myself?

3. Would the 384MB and 192-bit have a big impact on gaming at 1680x1050? 1920x1200?

Also if someone had some benchmarks for the 8800GS SLI performance could they post the link?

8800GS SLI should beat a single 8800GT,but benchies for the 8800GS,much less them in SLI are VERY rare,though i wouldn't recommend either the 8800GT or 8800GS SLI for 1920x1200 gaming,1680x1050 maybe,but NOT 1920x1200,you'll need a top-of-the-line card for that resolution unless you're not playing at higher settings/playing less demanding games.

It never worths SLI-ing two mid-range cards. The price you pay for 2X8800 GS will get you a 8800 GTS 512 which will perform better then those two. Even a GT should be a bit faster.

And for your other question, I never think it worths paying extra for a little overclock, when is so simple to just do it yourself. And it's quite possible that you'll do it better then the company that is selling the card.

Its practically the same price for 2 8800GS as 1 8800GT, and wouldn't you get a greater performance improvement from overclocking both the 8800GS's instead of just overclocking the 8800GT especially if they can overlock more?

8800gs is far from slow. It's about 25% slower than 8800gt but it is only 384mb card instead of the full 512mb. I wouldn't sli it though and get a 8800gts instead because let's face it SLI still doesn't work for all games or scale accordingly.

Hmm... true... I just saw this 8800 GTS(G92)
I just checked out some benchmarks for the new G92 8800GTS 512MB and it performs like an overclocked 8800GT at stock for roughly the same price. So now I'm probably gonna get the 8800GTS since a single card solution would allow me to upgrade later on just by adding in another one.

BTW if its listed for 409 MSRP on their site could I buy one from Newegg for 200 and step-up to a 9800GX2 for only another 200?
