The problem is not the amount of memory, but the way 8800gts performs from less memory. There are 256mb versions of 512mb cards which retain 90% of the performance, but with the 8800gts the 320mb model takes a much bigger hit in some games even at 1280x1024 resolution. But, the drop in performance almost always comes from enabling AA, so if you don't mind dropping down to 2x or 0x AA, then the 320mb card is a great value compared to the 640mb card. If it was up to me, I'd go with the 320mb card for 1280 resolution, because the performance hit relative to the 640mb card is much less than the price difference.
