When comparing these two chipsets, what are the real differences between them? I would like to know if the 875 premium is worth it for a SFF (shuttle) computer (games and graphics).

wrong, 865PE has 800mhz bus. unless you're overclocking, 865PE is just fine.

Main differences are the 875 supports ECC and officially supports PAT. Most 865PE motherboards hacked PAT to make it work.
