In performance one 7950 GX2 performs about on par or slightly better than two regular 7900GT in SLI mode. You dont need SLI to run the 7950GX2 which is a nice feature for those that dont have a SLi mobo or dont want to run two cards on their SLI mobo. It does however take up two cardslots due to its width. So one 7950GX2 is a better performer overall than two normal 7900GTs. However its not better than two 7900GTX cards in SLI so remember that.
Eventually (I'm betting it'll happen anyway) if you have a SLI mobo and get a 7950GX2 you could conceivably run two 7950GX2 in SLI and that'll give you Quad-SLI. thats pretty good future-proofing if you ask me. Right now though nVidia isnt supporting Quad-SLI (driver techinical issues) and the ones you do see being advertised from some pc manufacturers are tweaked without nVidia's support. So buyer beware about that.
