Presently I have two Zalman Reserators cooling my Opterons as well as my 6600GT.

So far so good, but I need more juice in the video department (and better yet: that dual-link DVI connector) and so I'd like to know what my options are.

I notice that Gainward has a card with a water block already mounted, unfortunately my dealer charges 64% extra for this feature. (maybe their pricing is off -- no cards are in stock yet) Plus, Gainward's webpage says nothing about what hose diameters are supported.

Zalman has a new GPU block, but they're still not covering the memory chips. Is that an issue?

~ Not really that useful unless you want to push the memory far.. having cooling on the memory lowers your water pressure/flow too.

Get an eVGA and watercool that.
