So, is there really a large difference besides power consumption? I don't want to spend more money than I need to.
 
power consumption, which means temperature and overclocking ability. If you dont care about overclocking and are planning on running at stock cooling then difference is small, if you want to overclock or want to switch to quiter cooling then go with a winchester.

You're talking about Dual Channel. Socket 754 has single channel, socket 939 has dual (128 bit)

The Winchester and Newcastles cores in Socket 939 both have 128 bit memory controllers.
Winchesters are not available on socket 754. Regardless of the core, the memory interfaces depend on the socket.
