I'd bite the bullet and drop around $100 on a good quality 450W+ PSU. The Antec TruePower 480s aren't too horribly expensive and ought to run even a SLI system without problems. Don't cheap out on the PSU, it is just about the most important component in your build.
350 should be fine. See sig.
I agree, espeically when we are talking about the new True 380S models that come with the Sonatas. My wife's computer has a newer Sonata that has 24A on the included PSU's +12V rail and it has no issues running a power hungry chip (she has a LGA775 3.4GHz Prescott on a 915PBL), so I personally know how nice the Antec True Powers are despite their lower (or should we say "more realistic"?) wattage rating.
I think, though, that if you are you are buying a new PSU and want some headroom to support things like SLI and dual core chips, the extra cost of getting a quality 420W or 480W is worth it. A good power supply could potentially last you through 2-3 upgrades/system rebuilds, so it is worth it to spend a bit extra to make sure you have all the power (and connectors) you need for the future.
