Well, they don't seem to have a single core that hosts 40 pipelines...on top of that, if you were to compare 2 CPUs (as in 2 Opterons) versus a dual core proc, I know you will find it uses less power...
I imagine the same would be true with GPUs, and less power means less heat. Drop the power requirments, you won't need external power bricks, or massive PSUs. Drop the heat, you won't need massive heatsinks...plus, having a single dual core GPU would be better, because you wouldn't need a overly large heatsink to cover 2 GPUs.
