4850x2 for one monitor at 1680x1050

Would this be overkill? Would I be better served with just a single 4870 1 gig or gtx 260 core 216?

I'd say overkill, get whichever out of the 4870 1gig or gtx 260 u can get a decent price for.

Right now (in UK) the 4870 is better value and am very tempted to grab one for myself (i game @ 1920x1200 btw)

Depends on the game. I can run CODWAW maxed out on 1280x1024 with a 4870 and get great FPS, on UT3 setting things on high will lag everything. If I had the money, I'd go for the 4870x2

Id get the 4850x2. Higher settings, more AA, and better performance in demanding games.

something is wrong there. ut3 does NOT require that much gpu.

it ran happily with everything maxed on 8800gs.

Overkill.
Any single GPU solution from 4850 performance upwards will be perfect.
Higher VRAM will also help with games with large textures, so look for 1GB versions.
