My phone camera takes 4k pics:
4080x3072 (4:3, 12.5 mpixels)
4080x2296 (16:9, 9.4mpixels)
4080x1792 (20.5:9, 7.3 mpixels)

My understanding is use 4:3 when doing portrait pics and 16:9 when doing landscape pics.

When do you use 20.5:9 mode?

Ultrawide resolution can also be described by its height, such as "UW 1080" and "1080p ultrawide" both stands for the same 2560×1080 resolution.

That's 2.37:1 aspect ratio.
21:9 = 2.33, which is close enough.

On my phone, ultra wide is the .5x button

I always use the full mode with my S23 Ultra. It completely fills my phone's display, and I have 21:9 monitors at home. It yields 4000 x 1868 images or 2.14:1. The only time I use 4:3 is if I'm taking an image of a round or square object, otherwise I prefer landscape.

A recent update now let's you select 1:1 images, and all modes let you select 12mp, 50mp, or 200mp.

Personally I crop my photos in post to whaterever aspect ratio I feel like if it improves composition.

Otherwise it also depends on which media you primarily use to view your photos.

Use whatever mode has the most pixels as you're gathering more information in the photo. You can always crop if you want a specific ratio.
