Go with the better video card. Also the CPU can be overclocked where as you cant really Oc the video card "that much" and you certainly cannot add pipelines and the other improvements found in the 7800GTX.

While a 3000+ is probably a little bit of a bottleneck, I still think its the better choice.

Yeah - go with the better GPU - most games aren't CPU-bound, yet.

EDIT: However... I'm against anybody buying the 7800GTX OR the 4800 X2 right now. It's just too much $$ for the (probably) un-noticable performance gain. But you get a big "e-penis" or awhile. I'd save your money until ATI comes out with their next card, or at least until the insane prices on these two parts get a little more 'respectible'.
